Southern Living Beef Tenderloin W Horseradish Sauce

Beef Tenderloin

Every bit I mentioned in my Holiday Giveaway Winner post, my favorite Christmas tradition is our Christmas Eve meal.  My family would all get dressed upward for church building, gather in the living room for drinks and appetizers, and and then accept the near delicious meal in the dining room before heading off to the Candle Light service.  Sometimes we would invite over another family unit from church building and sometimes it would just be the 3 of united states of america (or iv once my husband joined the picture). I love the formality of celebrating this way on Christmas Eve, and at present, information technology's but not the aforementioned without information technology.  And this repast, well mainly the meat, is only the best thing y'all've e'er tasted.  One twelvemonth, we had a family from church over to join us for dinner and the husband spent the ENTIRE dark talking almost how this was only the all-time meat he'due south always had.  And, allow me tell you, he'southward not wrong.  My hubby has come to love this tradition for probably no other reason than this beef tenderloin. So I just had to pass along this recipe.

This Purple Beef Tenderloin in from the Southern Living Christmas cookbook (I think pg 22) and passed forth to me by my mom.  Unfortunately, I don't take a picture of the one that I made last twelvemonth pre-Glow of Grace and Instagram, then I institute this and it looked the near similar to what ours turns out similar.  Just click on the image to pb you to that item recipe from food.com.  I'll sub out my own picture afterward the holidays so that I tin can pivot information technology.  This recipe is definitely pin-worthy in my heed!

Ingredients for the Tenderloin:
1 cup soy sauce
ii/3 cup vegetable oil
iii tbsp brown sugar
two tbsp Dijon mustard
1 tbsp white vinegar
1 tsp garlic powder
ane light-green onion, chopped
i (five-6lb) beef tenderloin

Ingredients for the Horseradish Sauce:
Sour Cream
Horseradish
Common salt (to sense of taste)

Directions:
– Combine all ingredients to create the marinade.
– Place tenderloin in a large null lock bag, pour marinade over meat and let sit for 4-5 days in the refrigerator.  Flip each solar day.

– Preheat oven to 400 degrees.
– Identify tenderloin on shallow roasting rack and bake for 40-55 min until a meat thermometer reads 145 degrees for medium rare or 160 degrees for medium.
– Let stand 10 minutes earlier slicing.
– Serve with horseradish sauce for dipping.

Tricks & Tips to a Perfect Tenderloin:
– Utilise (low sodium) Kikkoman soy sauce for the marinade.  Literally no other soy sauce can compare. Have information technology from a girl who has been to the Kikkoman factory and who uses soy sauce near daily.  ALWAYS buy Kikkoman.
– If you lot don't accept a meat marketplace nigh by, go the trimmed beef tenderloin from Costco.  Seriously, their meat is phenomenal.  The trimmed version is a niggling pricier, simply well worth it not to have to trim it yourself.
– If yous want to make this for your Christmas Eve or Christmas dinner, become buy your meat tomorrow.  The longer it marinades, the better.
– I know the cook time is kind of a large window, but it really depends on your oven.  So at twoscore minutes, start watching that thermometer carefully.  Nosotros ever serve ours medium rare.
– The corporeality of sour cream for the horseradish sauce will just depend on how many people you're serving.  Utilise your all-time judgement, and don't worry, it's non really something you tin can mess upwardly.  Add in horseradish depending on gustation.  Start out minor considering, just like your eye shadow, you can e'er add more, merely you can't undo what you've done.  Well y'all tin can, just you need more sour cream.

The side dishes seem to vary from yr to year, but they're ever delicately flavored.  The tenderloin is the clear star of the meal, and you want your sides to complement its wonderful flavor rather than overpower information technology. This year, I'll exist serving it with lemon shallot green beans, roasted ruby potatoes, and a butter lettuce salad with goat cheese, orange segments, toasted almonds and champagne dressing.

Now that I'm drooling and eagerly anticipating this repast, I recollect I'll just starting time counting downwards the minutes until we're devouring all of this deliciousness.  I promise you lot enjoy this recipe equally much as my family does!

All-time & Blessings,
